Essential Duties

  1. Direct the preparation, production and service of meals utilizing a standardized recipe file and established departmental policies and procedures. 2. Develop and monitor the operating budget and provide weekly updates; process weekly payrolls and maintain necessary documentation. 3. Forecast meal counts and determine production quantities for menu items; prepare orders for food, cleaning supplies, paper products, small utensils, and other products as required. 4. Supervise receiving and storage activities; responsible for sanitation and security of all storage facilities; maintain inventory records as instructed. 5. Direct the processing and preparation of food for catered events; coordinate arrangements with catering personnel to service event and supervise the service of the event; determine costs, compile and submit billing information. 6. Provide unit sanitation and adherence to proper food handling procedures. 7. Oversee customer admittance procedures and records. 8. Support integration of health and wellness principals in Yale recipes, products and services 9. Provide nutritional counseling to students with food allergies and special dietary needs 10. Train staff in food safety and allergen awareness. 11. Communicate principles of Health and Wellness to students, faculty and dining services staff across multiple units in the organization. Generate excitement about new concepts in wellness through various student programs and engagement activities. 12. Provide ongoing coaching, training, guidance and direction to staff members; maintain positive employee relations and resolve issues in a timely and proactive manner; manage performance of staff; participate in and respond to grievances. 13. Maintain excellent customer relations with masters, faculty, staff and students. 14. Perform other duties as assigned.

Required Education and Experience

Bachelor's Degree in Dietetics and Registered Dietitian or must receive RD within 6 months of hire. Minimum four-year experience, two years in dietetics and two-year previous operations management and food production experience; or an equivalent combination of education and experience.

Position Focus:

Reporting to the Wellness Manager and the Senior Director for Residential Dining, this new position combines operational management with nutrition leadership. Oversees professional staff and union employees to ensure excellence and high-quality hospitality standards. Ensures nutrition and wellness are successfully implemented in the Dining Halls. Serves as a consultant to students with allergies or other dietary needs. Checks recipes and ingredients for food allergen compliance and helps support sustainability efforts.
